Instructions
  1. Wash & Clean mangoes. Discard the top & slice mango lengthwise from both sides of seed.
  2. Cut the mango flesh diagonally & scoop the the flesh. This is the easiest way to extract maximum pulp from mango at home.
  3. Pour mangoes in a blender along with the juice.
  4. Add pinch of salt. Add cardamom powder at this point if using any.
  5. Now make a smooth puree in blender without any additional water.
  6. Transfer the mango puree in a large bowl
  7. Add fresh cream, condensed milk & whisk to incorporate everything.
  8. Add our secret agent, milk powder & mix well. There shouldn't be any lumps at all and mixture should be in smooth pouring consistency.
  9. Now pour the mixture into Kulfi molds with tightly fitted lid.
  10. In case of Kulfi on stick (popsicles) wrap the opening of mixture filled molds with metal foil & make small slit on top. Insert popsicle sticks.
  11. Set the molds in freezer for 2-4 hrs or overnight.
  12. To remove kulfi from molds roll each mold between palms or dip bottom half of each kulfi mold in a bowlful of water and pull with the stick or pour over the serving dish (in case of stick-less kulfi).
  13. Garnish with chopped mangoes or nuts of your choice & serve immediately.
